Salmon-Safe Dinner

Salmon-Safe is devoted to restoring agricultural and urban watersheds so that salmon can spawn and thrive. They have created a regional certification program with eco-labels for agricultural producers whose environmental practices protect water quality, fish and wildlife habitat, and on-farm biodiversity. More than 100 farms and 50 vineyards are certified Salmon-Safe in Washington and Oregon.

On April 15, Volunteer Park Cafe hosted a Salmon-Safe dinner to show our support and help bring awareness to this very important cause. The menu showcased products from three of Washington's certified Salmon-Safe farms: Grass fed beef from Thundering Hooves in Walla Walla, milk and dairy products from Fresh Breeze Organic Dairy in Lynden, and produce from Full Circle Farm in Carnation. The wine pairing options for the evening were from certified Salmon-Safe vineyards.

The menu for the evening was as follows:

Roasted Beets
Gingered Apple & Carrot Slaw

Braised Oxtail Risotto
Asparagus & Chives

Leg of Lamb
Honey Glazed Rainbow Carrots, Hazelnuts & Silky Yukon Potatoes

Rhubarb Panna Cotta
